A quick and easy tea cake
1 CUP hot black tea
1 CUP dried fruit
¾ CUP sugar
2 CUPS self raising flour
Soak all the ingredients together until cool. When cool add 2 cups of self raising flour mix together with a wooden spoon but don't over work (add more flour or small amounts of liquid to make a smooth batter). Cook in a loaf tin in a moderate oven for 45 minutes or until cooked. You could add a teaspoon of mixed spice, ground cardamon, or cinnamon to spice up this simple recipe.
